I brought a batch of cookies into the library last week, I figured for as much as I use the library, I should bring them something.
These cookies have been in heavy rotation in my household. They are vegan which means no butter, no eggs, no milk. No animal by products of any sort. (I'm not vegan, but vegetarian. I like to bake vegan because I get tiredof going through all the eggs, butter and milk in my pantry... so that's how I got into this.)
It is not my recipe, but I'm sharing it here....

1 cup unbleached all-purpose flour
1 tsp baking powder
1⁄2 tsp baking soda
1⁄4 cup unrefined sugar
1⁄4 tsp sea salt
1⁄3 cup pure maple syrup
1⁄4 tsp blackstrap molasses
1 - 1 1⁄2 tsp pure vanilla extract
1⁄4 cup organic canola oil (a little generous 1/4cup)
1⁄3 cup non-dairy chocolate chips
Preheat oven to 350°F (176°C).
In a bowl, sift in the flour, baking powder, and baking soda. Add the sugar and salt, and stir until well combined.
In a separate bowl, combine the maple syrup with the molasses and vanilla, then stir in the oil until well combined.
Add the wet mixture to the dry, along with the chocolate chips, and stir through until just well combined (do not overmix).
Place large spoonfuls of the batter on a baking sheet lined with parchment paper and flatten a little.
Bake for 11 minutes, until just golden (if you bake for much longer, they will dry out).
Let cool on the sheet for no more than 1 minute (again, to prevent drying), then transfer to a cooling rack.
Makes 8-10 large cookies.
and for a double chocolate chip cookie treat, cut the flour in half, and replace the other half with cocoa powder. (that's a Martha Stewart trick I learned years ago..)

She shows us something in here that isn't mentioned in the recipe: the combine althe dry, and all the wet ingredients in their respective bowls at the same time..the video doesn't give the recipe though which is honestly a bit annoying... Now, I don't know about the vegan-ese of my chocolate chips. so it's likely they aren't vegan, i think there's probably some milk chocolate in there.. so whatever. but these are delicious cookies. They are fast, they make a small batch. Make sure you use REAL Maple syrup. Have fun!
